Spicy Flounder

3 tablespoons The Well Dressed Olive Chipotle Olive Oil
2 portions of flounder, preferably 8oz each
1 lemon
1 teaspoon of cajun seasoning (or a pinch each of salt, white pepper, black pepper and cayenne)

Side dish options:
Green beans, Mexican rice of mashed potatoes

Preheat oven to 375 degrees. Spray a baking sheet with olive oil.

In your hands, rub The Well Dressed Olive's Chipotle Olive Oil on both sides of flounder filets.

Place founder on baking sheet. Halve the lemon and squeeze over all of the fish. Sprinkle a teaspoon of your favorite cajun or blackening seasoning on top of the fish (or use a combo of peppers and salt as listed above).

Place sheet in the oven and bake fish until flaky and cooked through, about 15-20 minutes. Squeeze the other half of the lemon on top of the fish and serve.
