1/2 cup red onion, chopped
1 tablespoon The Well Dressed Olive's Mushroom Sage Olive Oil
1/4 cup The Well Dressed Olive's Strawberry Balsamic Vinegar
3/4 cup spiced peach preserves
1/3 cup spicy brown mustard
1/4 teaspoon salt
1 lb regular flavored breakfast sausage (in roll)
1/2 cup Italian bread crumbs
Heat 1 tablespoon The Well Dressed Olive's Mushroom Sage Olive Oil over medium heat. Saute chopped onions for 2-3 minutes until onions soften. Add 1/4 cup of The Well Dressed Olive's Strawberry Balsamic Vinegar. Reduce by half, about 90 seconds.
Remove balsamic-onion mixture from heat. Combine with 1/3 spicy brown mustard and 3/4 cup peach preserves. Add salt and mix well.
Place 1lb of sausage into medium sized bowl. Add 2 tablespoons of the dipping sauce into the sausage and mix well.
Form the sausage mixture into bite size balls. Coat in the Italian bread crumbs. Place sausage balls onto a baking pan, which has been sprayed with a non-stick spray.
Bake for 15 minutes, until evenly brown. Turn bites often while baking, to achieve a uniform browning. Drain bites on a paper towel.
Serve with toothpicks and dipping sauce.
