1 head garlic
The Well Dressed Olive Garlic Olive Oil
14 oz french fries (roughly half a bag)
1/2 cup mayonnaise
1/4 The Well Dressed Olive Black Truffle Sea Salt
1 tablespoon The Well Dressed Olive White Truffle Specialty Oil
Salt and pepper to taste
Roast the garlic: Preheat oven to 375 degrees. Cut the top off the head of garlic to expose the cloves. Drizzle The Well Dressed Olive Garlic Olive Oil and sprinkle salt and pepper. Wrap in foil and bake for 45 minutes. Remove from oven, squeeze out cloves and finely chop.
Make the fries: Prepare fires according to the packaging. Remove from oven and coat with grated parmesan and black truffle sea salt.
Make the aioli: In a small bowl, whisk together mayo, grated garlic, and salt. Drizzle in The Well Dressed Olive White Truffle Specialty Oil and mix until combined.
