Mango Kale Salad
Complete this recipe with Serrano Honey Balsamic Vinegar.
1 bunch kale, thinly slice leaves
1 lime, juiced
4 tablespoons The Well Dressed Olive Jalapeno Olive Oil
2 teaspoons honey
2 tablespoons The Well Dressed Olive Serrano Honey Balsamic Vinegar
1 jalapeno pepper, minced
Ground black pepper and salt to taste
1 mango, diced small
3 tablespoons toasted pumpkin seeds
In a large serving bowl, add kale, half of the lime juice, drizzle 1 tablespoon The Well Dressed Olive Jalapeno Olive Oil and a little kosher salt. Massage the kale until it starts to soften and wilt, 2 to 3 minutes. Set aside while you make the dressing.
In a small bowl, whisk the remaining lime juice, honey, The Well Dressed Olive Serrano Honey Balsamic Vinegar, diced jalapeno, and lots of freshly ground black pepper. Drizzle in 3 tablespoons of The Well Dressed Olive Jalapeno Olive Oil while whisking until well blended.
When ready to plate, pour the dressing over the kale, and add the mango and pumpkin seeds. Toss and serve.
